Fattoush Salad or Peasant’s Salad

Fattoush salad is a bread salad made with greens, vegetables and fried or toasted pita bread. Also known as “Peasant’s Salad,” its name comes from the Arabic word for “crush.” Other ingredients such as matzo chips can be used in place of the hardened bread. The ingredients used in this Levantine dish are cut into fairly large pieces. The primary ingredients for fattoush salad include:

  • Bread
  • Lettuce
  • Cucumber
  • Tomato
  • Onion
  • Radish
  • Salt
  • Olive Oil
  • Lemon Juice

Additional ingredients may be added to enhance the flavor such as feta cheese, parsley, peppers, cabbage and olives.

Shepherd’s Salad

Choban salad, also known as Shepherd’s Salad or Çoban Salatası in Turkish, is one of the most popular salad dishes in Turkey. It is common to consume in the summer as it is light, fresh and easy to prepare. Unlike fattoush, Shepherd’s Salad is made up of finely chopped ingredients, but it does feature many of the same components. The main ingredients include tomatoes, onions, cucumbers, green pepper and parsley. Olive oil, salt and lemon juice are used as a dressing.

Israeli Salad

Israeli Salad is a finely-chopped dish made mostly with tomato and cucumber. Its style makes it one of the most recognized dishes from the country. The salad is served as a side dish, independently or stuffed in a pita. It was once served as part of a traditional Israel breakfast, and still remains a normal fixture at breakfast buffets. Israeli salad is made of many of the same ingredients as Turkish Salad, and one’s ability to cut the vegetables into uniform diced pieces is considered a skill for cooks. Variations of the recipe have been added by the various cultures that immigrate to Israel. Indian Israelis add chopped ginger and green chili peppers, and North Africans add lemon peel and cayenne pepper. Other variations add carrots, cabbage, fennel, chives and herbs such as mint or sumac.


Tabbouleh is one of the most popular salads in the Middle East, and it is eaten in many countries. This dish is so common that it also has its own popularity in Western cuisine, and it is usually made with tomatoes, parsley, mint and onion. It is more unique compared to other salads in that it often features bulgur or couscous to add volume and texture. Variations of the salad depend on national flair, and some add garlic, pomegranates and romaine lettuce.

Greek Salad

This salad has many names including “summer salad” and “rustic salad.” The traditional Greek salad is made with with tomato pieces, sliced cucumbers, feta cheese, onion and Kalamata olives. The pickled buds, leaves or berries of capers are sometimes added as well. The Greek Salad is very popular, and there are many variations of it made across the world. Ingredients added from other countries may include peperoncini, squash, milk, cabbage, lettuce, bell peppers, sardines or beets.
