One of the most well-known Turkish dishes around the world is pide, although probably the majority of people would know it as Turkish pizza. Pide consists of a base made of flat bread (similar to pita or chapati) and can have different toppings.

Today we will look at 3 pide recipes to try at home, all with different toppings.


There are many different recipes for the base as well, however, for the sake of simplicity we will use one base recipe and focus on the different toppings.

What you need for the dough:

  • 1 cup warm water
  • 2 cups flour + some additional flour for kneading
  • 1 egg
  • 1 tsp salt
  • 1 tsp yeast
  • 1 tsp olive oil

To make the dough:

  • Mix ½ cup of warm water with 1 tsp of yeast in a small bowl. Put the bowl aside for 5-10minutes so that the mixture will get frothy.
  • Put the flour and salt together in a large bowl, add the olive oil and the yeast mixture from the small bowl.
  • Pour in the remaining ½ cup of warm water and start kneading the mixture into a dough.
  • Knead for 5 minutes, so you get a smooth dough. The might get sticky while you´re kneading, so you can pour some extra drops of olive oil or stir in 2 tsp of flour to help shape a soft dough.
  • Leave the dough in the large bowl and cover it with film. Let it rest for 1 hour (so it can double in size).


During this hour it´s time to get your fillings ready.

  1. Meat, onion and peppers

What you need:

  • 400 gr ground beef
  • 1 chopped onion
  • 1 diced green pointy pepper
  • 2 diced tomatoes
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • Salt + pepper

How to prepare it:

  • Heat 1 tsp olive oil in a pan and stir the onion, pepper and tomatoes. Let them cook for 3-5 minutes on medium heat until they start to soften.
  • Insert the lemon juice and some salt and black pepper.
  • Put the ground meat in a bowl and add the cooked vegetables. Mix it well.
  1. Cheese

What you need:

  • 1 cup ricotta cheese
  • ½ cup feta cheese
  • 1 egg
  • 1 tsp olive oil
  • 1 tsp lemon juice
  • Some chopped fresh mint and thyme
  • Salt and pepper

How to prepare it:

  • Add all chopped ingredients together in a bowl and stir together. Add salt, pepper and other herbs to taste.
  1. Lamb

What you need:

  • 300 gr minced lamb
  • 2 diced tomatoes tomatoes
  • 1 chopped red pepper
  • 75g pepper paste
  • 5 garlic cloves
  • 1 tsp chilli flakes
  • Salt and pepper

How to prepare it:

  • Combine the tomatoes and red pepper with the pepper paste, garlic, chilli flakes and add salt and pepper to taste.
  • Add this mixture to the minced lamb and stir thoroughly.

Finishing touch

Now you have your base and one of the three fillings. Time to put them together and get this pide baked!

  • Divide the risen dough in half and roll two balls
  • Roll the dough balls into 2 oval shapes with a 0.2” thickness and put them on a baking tray
  • Spread the filling evenly over the 2 oval shapes leaving 1-2cm at the edges as a border with no filling
  • Brush the edges with a mixture of egg and olive oil
  • Bake for 30minutes in a preheated oven (180 C / 350 F)
  • If you made the cheese filling, remove the pide from the oven after 7 minutes, make a little well in the centre and add an egg before placing it back in the oven.
